These Homemade Turkey Sausage Patties are the perfect high protein breakfast, packed with flavor, less fat than pork sausage, and free from the artificial ingredients you'd find in most grocery store brands. Theyโ€™re made with simple ingredients, pan-fried to golden perfection, and ready in about 10 minutes.

If you're anything like me, you're always hunting for delicious breakfast options that donโ€™t derail your daily diet or make you feel like you're missing out. These turkey sausage patties are my go-to for meal planning, they're flavorful, easy to make, and way better than anything you'll find in the freezer aisle. Bonus: they freeze like a dream and reheat in just 4โ€“5 minutes in the air fryer.

I love stacking these into a protein-packed breakfast sandwich with scrambled eggs and avocado on a gluten-free English muffin. Or, Iโ€™ll crumble them into a scramble or wrap them into savory breakfast burritos.

Turkey Sausage Patties Ingredients & Tested Substitutions

  • Ground Turkey (80/20). I use ground turkey breast because it has less fat than pork, but a little fat helps with juicy texture. Avoid 99% lean for best flavor & texture as lean turkey tends to be dry.
  • Pure Maple Syrup. Just a touch for that traditional hint of sweetness. 
  • Fresh Sage. This is the best part of the flavor, donโ€™t sub dried if you can help it!
  • Garlic powder, paprika, cumin, ginger, allspice, black pepper, salt. The dream team spice blend for homemade sausage recipes. If you like spice, add a pinch of cayenne pepper or red pepper flakes to the blend.
  • Coconut Oil. Adds a little richness and helps you get that crispy edge. Olive oil or avocado oil works in a pinch but I find frying with coconut oil to be the best option.

Tips, Tricks & Favorite Add Ins

  • Want bigger patties? Go for it, just increase the cook time slightly.
  • These freeze well! Stack between pieces of wax paper, wrap in plastic wrap, and store in a freezer-safe container.
  • A great way to level up this turkey breakfast sausage recipe is to add fresh blueberries into the raw meat when you're adding the spice mixture. It adds a burst of extra flavor and sweetness!
  • Increase the heat by adding cayenne pepper or red pepper flakes to your spice blend.

Turkey Sausage Patty Step by Step Instructions

1. Mix the ingredients. In a large bowl, combine all ingredients except coconut oil. Mix well with your hands (a wooden spoon works too, but hands are best for texture).

2. Scoop the patties. Use a cookie scoop to form small patties. Roll into balls and flatten gently on a parchment paper-lined baking sheet.

3. Heat skillet over medium-high heat. Add coconut oil and let it melt and shimmer.

4. Cook patties in a single layer for 5 minutes per side, or until golden and cooked through. Use an instant-read thermometer to ensure an internal temperature of 165ยฐF. Transfer to a paper towel-lined plate to drain excess oil & repeat the process with each patty, working in batches if you need to.
