Jump to Recipe

This Watermelon Sorbet recipe is the most perfect easy treat for hot summer days! Made in the Ninja Creami machine with 3 simple ingredients, this easy recipe is a great way to sneak additional protein into your diet. It's also the perfect way to use up leftover watermelon you have in the fridge!

Watermelon Sorbet is the perfect sweet summer treat! If any fruit perfectly captures the essence of summer, it is hands down a juicy, ripe watermelon. I'm a huge fan of watermelon & if you are too then I know you will find this to be the perfect treat to satisfy your cravings!

I love adding protein to my dessert recipes & ever since I purchased a ninja creami ice cream maker, I've been sneaking protein into ice cream & fruit sorbets whenever I get the chance. This Watermelon Sorbet ninja creami recipe uses grass fed beef collagen for a protein boost while still maintaining the thicker sorbet texture you expect.

Why You'll Love This Recipe

  • It is made with simple ingredients. All you need is seedless watermelon chunks, fresh lime or lemon juice & your favorite collagen powder.
  • It is easy. Since this sorbet is made in the ninja creami machine, it is incredibly easy to make this creami treat at home.
  • It is a delicious treat. Watermelon sorbet is made with fresh fruit which gives it the best flavor. It is truly like a taste of summer!

Ninja Creami Watermelon Sorbet Ingredients & Tested Substitutions

Fresh Watermelon. It's easiest to grab pre-cut seedless watermelon chunks you'll find at most grocery stores, but since this can be pricey a whole or half watermelon will work just fine. I personally like to make this recipe after I buy a whole watermelon so I have a refreshing treat to make with the leftover watermelon.

Lime Juice. I love using fresh lime juice because the flavor is nicer, but you can use bottled if it's all you have. Alternatively, lemon juice will work as well.

Collagen Powder. I love adding protein to my desserts and in this case collagen will add 14 grams of protein. It also helps create a thicker sorbet consistency & makes it really creamy.

Watermelon Sorbet Step by Step Instructions

1. Mix the sorbet base. Add the fresh seedless watermelon chunks, lime juice and collagen powder to a blender or food processor & blend until smooth.

2. Freeze. Pour the sorbet into a ninja creami pint container just to the max fill line. Place storage lid on the place pint in the freezer for at least 8 hours up to 24 hours.

3. Make the sorbet. Place the pint container in the outer bowl, then lock the outer bowl lid in place. Place the bowl into the ninja creami, locking into place. Power on the ninja creami & press the sorbet setting to process.

4. Respin. Once the sorbet has processed, add one tablespoon of lime juice to the pint, place back into the creami and press the re-spin button.

5. Serve. Scoop the watermelon sorbet into a dish, cone or glass & enjoy!

Expert Tips & Tricks

  • Use this watermelon sherbet as the base for smoothie bowls for a refreshing breakfast.
  • If you want something more than the natural sweetness of the watermelon, you can add a touch of honey or maple syrup to the sorbet base.
  • Make cantaloupe sorbet or honeydew sorbet by swapping the watermelon chunks for either type of melon.
  • Make it a cocktail or mocktail by adding a shot of tequila or NA tequila, two scoops of watermelon sorbet & top it off with tonic water for a refreshing treat that takes on more of a slushy texture, perfect for hot days at the beach or poolside!

How to Store Watermelon Sorbet

On the off chance you don't finish this frozen treat in one sitting, here is what you can do to ensure it stays fresh the next time you'd like to enjoy.

Keep the leftovers in the ninja creami pint container & use a spoon to create a level surface with what’s left over. Place the lid back on and store until ready to enjoy again. You’ll need to go through the process again of using the “sorbet" feature, then adding a splash of lime juice & remixing again. Watermelon sorbet will keep in the freezer up to 2 weeks for maximum freshness.
