I’ve been testing different cottage cheese recipes lately (hello, cottage cheese ice cream and cottage cheese ranch dip), and this one might be my new favorite. It’s giving nacho cheese sauce, but make it better-for-you.

  • Cottage Cheese. I recommend full-fat cottage cheese for best flavor and creaminess, but low-fat or fat-free cottage cheese also work. Whip it in a food processor or with an immersion blender for a smooth base.
  • Shredded Cheddar Cheese. Use real shredded cheese (not pre-shredded if possible) for maximum meltability. Sub with pepper jack cheese or Mexican blend cheese for a kick.

2. Heat and melt. Pour the mixture into a small pot or microwave-safe bowl. Stir in 1 cup shredded cheddar cheese and heat on low heat (or in the microwave in 10 second increments) until the cheese is fully melted and the dip is smooth.

3. Customize. Optional: stir in diced green chilies, jalapeños, or cooked ground beef for extra flavor.

4. Serve it up. Transfer to a serving dish and top with green onion, pico de gallo, or a drizzle of hot sauce. Serve warm with your favorite tortilla chips or veggies.
