The Best High Protein Pumpkin Pie Pudding Recipe

If you're looking for a quick and easy way to satisfy your seasonal cravings while also moving the needle forward towards your protein goals, then this Pumpkin Protein Pudding is for you! With between 30-40 grams of protein per serving, it's the perfect treat for a healthy breakfast, a quick snack or a satisfying dessert. Made with simple ingredients you likely already have on hand it's the perfect way to whip up a sweet treat fast!

I love eating dessert but I also have health & fitness goals that are important to me, so by incorporating wholesome desserts made with healthy ingredients and protein I am able to satisfy my sweet tooth and easily stick to the plan because I'm not depriving myself of anything. Protein Pumpkin Pudding Ingredients & Tested Substitutions

  • Yogurt. I tested this recipe using plain greek yogurt, plain skyr and dairy free vanilla coconut milk protein yogurt from Siggis. Greek yogurt & skyr will boast a thicker texture, almost like a mousse, while the dairy free yogurt was a little thinner like traditional pudding. All 3 options were delicious! I chose to use the dairy free Siggi's yogurt because it has 11 g protein per serving which is much more than traditional dairy free yogurts, but you may use whatever plain or vanilla flavored yogurt you prefer.
  • Pure Pumpkin Puree. You can use canned or fresh pumpkin puree, just ensure you are not using pumpkin pie filling.
  • Vanilla Protein Powder. Be sure to choose a protein powder you actually enjoy the taste of. My favorite protein powder is this grass fed beef isolate protein (use code PRETTYDELISH to save 15%).   • Maple Syrup. If your protein powder is not sweetened, or not sweet enough, you can add a touch of real maple syrup for sweetness.
  • Pumpkin Pie Spice. I used pumpkin pie spice to really give the pudding an authentic pumpkin pie flavor, but you can use cinnamon if you prefer.
  • Gluten Free Graham Crackers or Cinnamon Cookies. These are great to have on hand for crumbling on top or dipping. I used Siete Foods Mexican Shortbread Cookies, but graham crackers would be an excellent option too.

Pumpkin Pie Protein Pudding Step by Step Instructions

1. Mix the pudding. In a large mixing bowl add yogurt, pumpkin puree, protein powder, pumpkin pie spice & maple syrup if using. Whisk ingredients together with a whisk or a hand mixer until fully incorporated & no clumps of protein powder remain.

2. Add toppings. Sprinkle with cinnamon & add crushed up graham crackers or cinnamon cookies for garnish & enjoy!

How to Store Pumpkin Protein Pudding

If you don't finish the full serving or you'd like to meal prep your protein pudding you may store it in airtight containers in the fridge for up to 5 days. I do not recommend freezing and thawing the protein pudding.

  • ¾ cup skyr or greek yogurt can sub thick dairy free yogurt
  • ¼ cup pumpkin puree
  • 1 scoop vanilla protein powder
  • 1 teaspoon maple syrup optional, for extra sweetness
  • 1 teaspoon pumpkin pie spice can sub cinnamon
