Single Serve Protein Monster Cookies Ingredients & Tested Substitutions
- Protein Oatmeal. I have a few brands of protein oats I like but I usually opt for Bob's Red Mill since it doesn't have any additional flavoring. Regular rolled oats for a similar texture or quick oats for a softer cookie can be substituted.
- Unflavored Protein Powder. I like Equip Foods grass fed beef isolate protein powder because it helps to give these cookies their chewy texture, but you can use any type of protein powder you prefer. I find that the Equip Foods vanilla protein powder isn't baking as well as it used to, but you can swap in vanilla whey protein powder or vanilla pea protein powder if you prefer. Note that using whey or plant based protein powders will result in a cakier texture.
- Baking Powder. Baking powder is necessary in helping the cookie rise slightly and creates a tender texture.
- Peanut Butter. Opt for a natural peanut butter as the oil not only adds the best flavor but it also adds moisture the cookie dough needs. You can substitute this for a natural cashew butter or almond butter if you prefer, but do not omit the nut butter or the recipe won't work.
- Maple Syrup. It is important to use real maple syrup and not pancake syrup as it not only adds adds depth of flavor but it helps the cookie hold together & bake properly.
- Almond Milk. My personal preference is to use an organic unsweetened almond milk, but you may use whatever type of milk you prefer.
- Vanilla Extract. Opt for a high quality vanilla extract as it enhances the overall flavor and sweetness without adding sugar.
- Dark Chocolate Chips. Hu Kitchen Dark Chocolate Gems or Enjoy Life dark chocolate chips are my favorites, but feel free to use milk chocolate chips or whatever type of chocolate chips you like best.
- Unreal Snack Chocolate Candy Gems. I like using Unreal Snacks chocolate candies because they are a more wholesome option than traditional M&Ms
Single Serve Protein Cookie Step by Step Instructions
- Pre-heat oven to 350 degrees fahrenheit and line a cookie sheet with parchment paper.
- Mix the batter. Add all ingredients except for the chocolate chips & candies to a large mixing bowl. Mix together with a fork until a thick batter forms and all ingredients are fully incorporated. Note: the batter will resemble traditional cookie dough, but may be a touch stickier depending on the type of protein powder you are using.
3. Add ins. Fold in choc chips and candies.
4. Scoop the dough. Using a cookie scoop, scoop the dough onto the prepared baking sheet. Press the scoop down gently with your palm or the back of the ice cream scoop to form a cookie shape as they will not spread as much as traditional cookies while baking, so this will help them out.
5. Bake. Bake for 8-10 minutes until cookie is set & golden brown. If the cookie isn't quite set when you remove it from the oven, instead of baking longer than 10 minutes, place it in the fridge for 5 minutes to help it set.

- Be sure to use natural peanut butter as the oils help to add moisture to the cookie dough.
- The protein powder I prefer to bake with is a grass fed beef isolate protein but this recipe will work with your favorite whey or plant-based protein powder, you will just find that the texture is cakier without the crisp edge that mine have.
- Chill the cookies in the fridge after baking for around 5 minutes to help them set if they feel a bit soft out of the oven. They will firm up at room temperature, but chilling the cookie can speed this up. Not required, but a good option if you don't want to wait too long to eat!
How to Store Protein Cookies
If you don't finish your entire single serve protein cookie or want to double the batch, store leftovers in an airtight container or ziplock bag for up to 2 days for best results.

Can I bake without protein powder?

Hi Cindy! I haven't tested that since this recipe is intentionally a protein cookie, however I think if you replace the protein powder with oats it will come out fine. You may need to add a touch more peanut butter. If you try that, let me know!
