These air fryer smashed potatoes are IT when it comes to easy low FODMAP side dishes. They require very little hands-on cooking time and just a few staple ingredients which means they will quickly become your most favorite side dish for brunch or dinner!

When you’re following the low FODMAP diet, finding side dishes that not only satisfy cravings but are super delicious can sometimes feel like the ultimate challenge. But not to worry, I’ve got you covered with this air fryer smashed potatoes recipe that you can customize to your personal taste any way you like by adding your favorite herbs + spices.

As someone who healed their SIBO and IBS through the low FODMAP diet, having healthy low FODMAP options available and at the ready was always key. Meal prepping breakfast, lunch, dinner and snacks helped take the guesswork out of what to eat and helped ensure that everything I was munching on was helping me move the needle one step closer to my goal of healing my gut. These smashed potatoes are the perfect addition to your meal prep routine because you can serve them for breakfast, lunch or dinner making this the perfect easy low FODMAP side dish recipe!

Air fryer smashed potatoes are probably my number one favorite way of preparing potatoes. I’m a big fan of baby medley potatoes which usually come in a 1lb bag and contain a mixture of purple, yellow, red, and/or white potato. They’re perfectly bite sized, so much quicker to prepare, and make the perfect addition to any meal.

Low FODMAP Tip: Potatoes are low FODMAP friendly in 2.7 oz servings, which is about 1/2 of a medium potato. You can also feel free to leave the peels on unless you are specifically avoiding extra fiber on your gut healing journey.

Air Fryer Smashed Potatoes Tips + Tricks

Gather Your Ingredients

To make these crispy + delicious low FODMAP smashed potatoes, you will need:

  • 1lb baby medley potatoes
  • garlic infused olive oil
  • sea salt
  • fresh or dried thyme

Flavor Tip: Swap out the thyme for any of your favorite seasonings like taco seasoning, paprika, or oregano + rosemary.

Frequently Asked Questions for Air Fryer Smashed Potatoes

Do I need to boil the potatoes ahead of time?

Yes, always make sure to boil the potatoes ahead so that you are able to smash them. You’ll want to make sure that the potatoes are firm yet fork-tender; that’s how you will know they are done. This typically takes about 25-30 minutes.

Do I need to pre-heat the air fryer?

You only need to pre-heat the airfryer if your specific model requires it. The air fryer that I use is amazing and does not need to be pre-heated, so it makes preparing food in the air fryer a snap!

How long does it take to make air fryer smashed potatoes?

Around 45 minutes. You’ll boil the potatoes for 25 minutes and then air fry them for 15 minutes.

What if I don’t have an air fryer?

If you don’t have an air fryer, don’t worry you can still make these crispy smashed potatoes in your oven! Simply pre-heat oven to 425F prior to boiling the potatoes + bake them on a sheet pan for 30-40 minutes or until they are golden & crispy.

Are potatoes low FODMAP?

Yes, potatoes are low FODMAP! According to Monash University, 2.7oz of potato tested “green” for FODMAPs, meaning around 1/2 of a potato is low FODMAP friendly.

Where to buy garlic infused olive oil?

I love to make my own garlic infused olive oil, but sometimes I don’t want to wait for it to infuse, so I always make sure to keep plenty of Fody Foods Garlic + Shallot infused olive oils in my pantry. You can purchase Fody Foods on their site, in Whole Foods or on Amazon. This is the best options for those who are super sensitive because all Fody Foods products are certified low FODMAP.

Equipment

  • large pot
  • Air Fryer

Ingredients
  

  • 1 lb bag baby medley potatoes
  • 2 tbsp garlic infused olive oil
  • 1 tsp sea salt
  • 1 tsp fresh or dried thyme can use rosemary or oregano as a substitute

Instructions
 

  • Pre-heat air fryer to 400F (if your brand of air fryer requires a pre heat.)
  • Fill a large pot with water and bring to a boil over medium high heat.
  • Add in potatoes and boil until they are fork tender, about 25 minutes.
  • Once potatoes are tender, drain + arrange on a plate or flat surface.
  • Smash each potato gently with the back of a fork. This gives them a greater surface area to crisp up while roasting.
  • Next, drizzle potatoes with garlic infused olive oil.
  • Finally, sprinkle generously with sea salt + thyme.
  • Arrange potatoes in the basket of your air fryer so that they are in one even layer. Set the air fryer to 400F and cook for 15 minutes.

Notes

Note: If you do not have an air fryer, you can make this recipe in the oven by baking the potatoes on a parchment lined baking sheet at 425F for around 20-30 minutes or until the potatoes are golden brown + crisp.
