These air fryer smashed potatoes are IT when it comes to easy low FODMAP side dishes. They require very little hands-on cooking time and just a few staple ingredients which means they will quickly become your most favorite side dish for brunch or dinner!
1teaspoonfresh or dried thymecan use rosemary or oregano as a substitute

Instructions
Pre-heat air fryer to 400F (if your brand of air fryer requires a pre heat.)
Fill a large pot with water and bring to a boil over medium high heat.
Add in potatoes and boil until they are fork tender, about 25 minutes.
Once potatoes are tender, drain + arrange on a plate or flat surface.
Smash each potato gently with the back of a fork. This gives them a greater surface area to crisp up while roasting.
Next, drizzle potatoes with garlic infused olive oil.
Finally, sprinkle generously with sea salt + thyme.
Arrange potatoes in the basket of your air fryer so that they are in one even layer. Set the air fryer to 400F and cook for 15 minutes.

Note: If you do not have an air fryer, you can make this recipe in the oven by baking the potatoes on a parchment lined baking sheet at 425F for around 20-30 minutes or until the potatoes are golden brown + crisp.
