Gluten-Free Rice Krispie Treats Ingredients & Ingredient Information
- Brown Rice Cereal. I used gluten free brown rice crisps cereal. Unfortunately Kellogg's Rice Krispies Cereal is not gluten free, at least not here in the U.S. I've seen gluten free versions in Canada, but you can find other brands of gluten free puffed rice cereals from places like Whole Foods and Amazon.
- Marshmallows. Kraft Jet-Puffed Marshmallows are considered gluten free and do not have any gluten-containing ingredients, nor does the packaging state there is potential for cross contamination, but if you have a severe gluten intolerance you may want to opt for a "safer" brand. I like these vegan marshmallows that are certified gluten free. IMPORTANT NOTE: You MUST use fresh marshmallows in this gluten free rice krispies treats recipe or it will NOT work. Trust me, I've tested it with marshmallows I had sitting in my pantry and it was a disaster!
- Grass-fed Unsalted Butter. I prefer to use unsalted butter but you’re welcome to use salted butter if your tastebuds prefer. You can also use vegan butter as well to make vegan rice krispie treats.
- Vanilla Extract. Use a high quality vanilla extract for best results.
- Protein Powder. If you're adding protein powder, vanilla or unflavored protein will work best, but you can really use any flavor you like.
- Add-Ins. You can add in ingredients like chocolate chips, peanut butter chips, or even use chocolate rice cereal instead!
Gluten Free Rice Krispies Treats Recipe Steps
- Melt the butter & marshmallows. Add butter to a medium pot over medium-low heat, stirring it gently until the butter melts. Once butter is melted, add marshmallows to the pot, stirring often until melted. The marshmallows will form a bit of a paste, like that of marshmallow fluff.
2. Add remaining ingredients. As soon as the marshmallow has melted, immediately remove the pot from the heat. Working quickly, add vanilla extract, gluten free rice cereal & protein powder, if using, to the marshmallow and fold it in using a wooden spoon or spatula. Continue folding until all ingredients are well mixed & rice cereal is coated with gooey marshmallows.
3. Press into baking dish. Using your spatula or wooden spoon, guide the mixture into an 8x8 prepared pan lined with parchment paper or greased with cooking spray, pressing down gently until the rice krispies treats are in an even layer in the pan. Allow the rice krispies treats to cool at room temperature for about 10 minutes before slicing into 9 individual treats. For best results, use a serrated knife when cutting.

Are marshmallows gluten-free?
Marshmallows are traditionally made with cane sugar, corn syrup and gelatin & puffed up with air. Though each of these ingredients are gluten free, not every brand of marshmallow is certified gluten free.
Are marshmallows low FODMAP?
In addition to being gluten free, marshmallow are also low fodmap friendly, so this is a great snack or dessert option if you're following a low fodmap diet.
Is all brown rice cereal gluten free?
Rice is not a gluten-containing grain, however not all brands of crisp rice cereal are actually gluten free and often have gluten in their ingredient formulas. Opt for brands that are certified gluten free. Unfortunately, the Kellogg's Rice Krispies brand is not gluten free, but this is a great alternative.
What kind of protein powder should I use?
I like to use this protein powder that is made from grass fed beef, however you can use your favorite type of protein powder if you're making gluten free protein rice krispie treats. Note, if you omit the protein powder in this recipe, it won't change the process or outcome.
How long do gluten free rice krispies treats stay fresh for?
They will stay fresh at room temperature for 2-3 days. Be sure to cover them with plastic wrap or store them in an airtight container. Alternatively, you can freeze them up to 3 months. Simply wrap each individual square with plastic wrap, then store in an airtight container or freezer bag.
