Instructions
Melt the butter & marshmallows. Add butter to a medium pot over medium-low heat, stirring it gently until the butter melts. Once butter is melted, add marshmallows to the pot, stirring often until melted. The marshmallows will form a bit of a paste, like that of marshmallow fluff.
Add remaining ingredients. As soon as the marshmallow has melted, immediately remove the pot from the heat. Working quickly, add vanilla extract, gluten free rice cereal & protein powder, if using, to the marshmallow and fold it in using a wooden spoon or spatula. Continue folding until all ingredients are well mixed & rice cereal is coated with gooey marshmallows.
Press into baking dish. Using your spatula or wooden spoon, guide the mixture into an 8x8 prepared pan lined with parchment paper or greased with cooking spray, pressing down gently until the rice krispies treats are in an even layer in the pan. Allow the rice krispies treats to cool at room temperature for about 10 minutes before slicing into 9 individual treats. For best results, use a serrated knife when cutting.

Favorite Holiday Rice Krispie Treat Variations
One of my favorite things about homemade gluten-free Rice Krispie treats is how easy they are to customize for different holidays! With just a few simple decorations, you can turn this classic no-bake dessert into a festive treat for Halloween, Christmas, or any holiday celebration.
Halloween Monster Rice Krispie Treats
Turn your classic Rice Krispie treats into adorable little monsters! Once the treats have cooled and set, cut them into rectangles. Melt orange, purple, and green candy melts in separate bowls according to package directions. Dip the tops of the treats into the melted candy or drizzle it over each square. While the coating is still wet, add edible candy eyes in different sizes to create silly monster faces. Allow the coating to set before serving.
Halloween Mummy Rice Krispie Treats
These spooky little mummies are one of the easiest Halloween treats to make! Start by cutting your cooled Rice Krispie treats into rectangles. Melt white chocolate or white candy melts and transfer to a piping bag or zip-top bag with a small corner snipped off. Drizzle the chocolate back and forth across each treat to create the look of mummy bandages. Add two candy eyes while the chocolate is still wet, then let everything set before serving.
Christmas Rice Krispie Treats
Give these classic treats a festive Christmas makeover with white chocolate and holiday sprinkles! Once cooled, cut the Rice Krispie treats into squares or rectangles. Dip one corner of each treat into melted white chocolate, then decorate with red, green, and white holiday sprinkles before the chocolate sets. For an extra festive touch, drizzle a little melted dark chocolate over the top. These make a great addition to Christmas cookie platters, holiday parties, or homemade treat boxes!Tip: If you're making these treats gluten-free, double-check that your crispy rice cereal, candy melts, chocolate, sprinkles, and candy eyes are all gluten-free, as ingredients can vary by brand.
