I love this recipe because I'm a cookie dough lover but eating raw cookie dough isn't necessarily safe due to the presence of ingredients like raw eggs & raw flour which can contain bacteria.

Cookie dough lovers will flip for this easy chocolate chip cookie dough bark! It whips up with just a few minutes of hands on time and requires no baking, just freezing. Sweetened with maple syrup & melted chocolate it's the ideal sweet treat to make when you're focused on wellness while still eating fun foods.

Cookie Dough Bark Ingredients & Tested Substitutions

Almond Flour. I use almond flour in this recipe not only to keep it gluten free, but also to keep it safe to eat raw without having to take the extra step of preparing heat-treated flour, which is a necessary step when making edible cookie dough with all purpose flour. 

Dark Chocolate Chips. My preference is to use dark chocolate chips but you may use semi-sweet chocolate chips or dairy free chocolate chips for a vegan option.

Maple Syrup. Maple syrup adds sweetness to the cookie dough bark without the use of refined sugars.

Coconut Oil. Using refined coconut oil can help ensure you do not taste the coconut flavor. If you prefer, you can substitute this with melted butter or dairy free butter.

Vanilla Extract. You may also use vanilla bean paste if you prefer.

Flaky Sea Salt. An optional but recommended garnish.

Expert Tips, Tricks & Favorite Add Ins

  • Add a scoop of your favorite vanilla protein powder to the dry ingredients to make protein cookie dough bark.
  • Swap out the melted chocolate coating for melted peanut butter chips for a chocolate chip peanut butter cookie dough.
  • Use white chocolate chips instead if you're not a chocolate lover.
  • For best results, microwave the chocolate chips in 15 to 30-second intervals & stir in between to ensure the chips are melted and you do not burn the chocolate.
  • Add a touch of almond extract to the cookie dough layer and instead of chocolate chips, add your favorite sprinkles for a twist on birthday cake edible almond flour cookie dough.

Cookie Dough Bark Step by Step Instructions

  1. Make the cookie dough layer. In a large mixing bowl, mix together almond flour, protein powder if using, maple syrup, melted coconut oil and vanilla extract.

2. Add the chocolate chips. Fold in ½ cup of the chocolate chips. Note the mixture will be crumbly at first. Continue to fold the mixture until the almond flour absorbs the moisture & comes together.

3. Prep & chill the dough layer. Line a baking sheet with parchment paper and press the cookie dough down into about ¼” thick even layer using clean hands. Freeze for 10-15 minutes. 

4. Melt the remaining chocolate chips. While the bark chills, melt the remaining chocolate chips in the microwave in 15-30 second increments, until fully melted. It is helpful to give the chips a stir in between heating increments so you do not burn the chocolate.

5. Add the chocolate topping. Pour the melted chocolate chips over the frozen bark & smooth out in an even layer. Sprinkle with flaky sea salt if desired & place back in the freezer to set for about 1 hour. Once set, break up into pieces & enjoy!

How to store cookie dough bark

Store any leftover cookie dough in an airtight container in the fridge for up to one week.

  • 1.5 cups almond flour
  • ¼ cup maple syrup
  • ¼ cup coconut oil melted
