- Protein Oatmeal. I used Bob’s Red Mill protein oatmeal for an extra protein boost. You can sub oat flour or regular rolled oats if you prefer. Alternatively, if you want a lower carb option you can swap the oats for almond flour.
- PB2 Peanut Butter Powder. Lends great PB flavor with less fat. I do not recommend substituting this ingredient.
- Vanilla Whey Protein Powder. I recommend a clean-tasting whey protein powder for best results, but a vegan protein powder works too (you may need to adjust liquid).
- Melted Coconut Oil. Helps hold everything together. Melted peanut butter or almond butter can work in a pinch, but it will change the flavor.
- Pure Maple Syrup. Just enough to lightly sweeten the cookie dough bark.
- Vanilla Extract. Adds warmth and depth. Don’t skip it!
- Dark Chocolate Chips. Melted for that signature chocolate topping. You can also try white chocolate chips or a swirl of both.

Monster Cookie Dough Protein Bark Step by Step Instructions
1. Make the dough. In a large mixing bowl, stir together the oatmeal, PB2, protein powder, maple syrup, melted coconut oil, and vanilla extract until a thick dough forms.





2. Fold in the chocolate gems. Stir until evenly distributed.


3. Press & freeze. Line a baking sheet or quarter sheet pan with parchment paper. Press the dough into an even ¼” layer. Freeze for 10–15 minutes.


4. Melt chocolate. In a small bowl, microwave dark chocolate chips in 15–30 second increments, stirring in between until fully melted.


5. Add topping. Pour melted chocolate over the frozen dough layer. Smooth with a spatula. Add crushed peanuts or flaky sea salt if desired.




6. Freeze again. Return to freezer for 1 hour or until fully set. Break into pieces and enjoy!
