High Protein Single Serve Protein Monster Cookie

This Protein Monster Cookie is a single serve version of my viral protein monster cookies. It is the perfect sweet treat when you're craving something indulgent but want to hit your protein goals too. With a chewy texture and just the right amount of chocolate, this cookie packs in 21 grams of protein so there's no need to reach for protein bars when your sweet tooth strikes!

Equipment

Ingredients
  

  • 3 tablespoons protein oats
  • 2 tablespoons unflavored protein powder or vanilla
  • ¼ teaspoon baking powder
  • 1 tablespoon natural peanut butter
  • 1 teaspoon maple syrup
  • 1 teaspoon almond milk or milk of choice
  • ½ teaspoon vanilla extract
  • 1 tablespoon dark chocolate chips
  • 1 tablespoon unreal chocolate candy gems

Instructions
 

  • Pre-heat oven to 350 degrees fahrenheit and line a cookie sheet with parchment paper.
  • Mix the batter. Add all ingredients except for the chocolate chips and candies to a large mixing bowl. Mix together with a fork until a thick batter forms, and all ingredients are fully incorporated. Note: the batter will resemble traditional cookie dough, but may be a touch stickier depending on the type of protein powder you are using.
  • Add ins. Fold in chocolate chips and candies. Careful to not smash the candies while folding in.
  • Scoop the dough. Using a cookie scoop, scoop the dough onto the prepared baking sheet. Press the scoop down gently with your palm or the back of the ice cream scoop to form a cookie shape as they will not spread as much as traditional cookies while baking, so this will help them out.
  • Bake. Bake for 8-10 minutes until cookie is set and golden brown. If the cookie isn't quite set when you remove it from the oven, instead of baking longer than 10 minutes, place it in the fridge for 5 minutes to help it set.

Notes

Expert Tips & Tricks

  • Be sure to use natural peanut butter as the oils help to add moisture to the cookie dough.
  • The protein powder I prefer to bake with is a grass fed beef isolate protein but this recipe will work with your favorite whey or plant-based protein powder, you will just find that the texture is cakier without the crisp edge that mine have.
  • Chill the cookies in the fridge after baking for around 5 minutes to help them set if they feel a bit soft out of the oven. They will firm up at room temperature, but chilling the cookie can speed this up. Not required, but a good option if you don't want to wait too long to eat!

 

How to Store Protein Cookies

If you don't finish your entire single serve protein cookie or want to double the batch, store leftovers in an airtight container or ziplock bag for up to 2 days for best results.
