This monster cookie dough protein bark is the viral-inspired protein bark flavor you didn’t know you needed! It’s made with simple ingredients like vanilla protein powder, peanut butter powder, and dark chocolate chips, and it’s packed with healthy fats, flavor, and protein to keep you full and happy, no baking required. It's perfect for meal prep so you always have a sweet treat on hand.
Make the dough. In a large mixing bowl, stir together the oatmeal, PB2, protein powder, maple syrup, melted coconut oil, and vanilla extract until a thick dough forms.
Fold in the chocolate gems. Stir until evenly distributed.
Press & freeze. Line a baking sheet or quarter sheet pan with parchment paper. Press the dough into an even ¼” layer. Freeze for 10–15 minutes.
Melt chocolate. In a small bowl, microwave dark chocolate chips in 15–30 second increments, stirring in between until fully melted.
Add topping. Pour melted chocolate over the frozen dough layer. Smooth with a spatula. Add crushed peanuts or flaky sea salt if desired.
Freeze again. Return to freezer for 1 hour or until fully set. Break into pieces and enjoy!
