Ingredients
  

  • 1 cup protein oatmeal I like Bob's Red Mill
  • ½ cup pb2 peanut butter powder
  • ½ cup vanilla whey protein powder approx. 1 scoop
  • ¼ cup coconut oil melted
  • ¼ cup maple syrup
  • 2 teaspoons vanilla extract
  • 1 cup dark chocolate chips
  • ½ cup Unreal chocolate gems

Instructions
 

  • Make the dough. In a large mixing bowl, stir together the oatmeal, PB2, protein powder, maple syrup, melted coconut oil, and vanilla extract until a thick dough forms.
  • Fold in the chocolate gems. Stir until evenly distributed.
  • Press & freeze. Line a baking sheet or quarter sheet pan with parchment paper. Press the dough into an even ¼” layer. Freeze for 10–15 minutes.
  • Melt chocolate. In a small bowl, microwave dark chocolate chips in 15–30 second increments, stirring in between until fully melted.
  • Add topping. Pour melted chocolate over the frozen dough layer. Smooth with a spatula. Add crushed peanuts or flaky sea salt if desired.
  • Freeze again. Return to freezer for 1 hour or until fully set. Break into pieces and enjoy!

Notes

Expert Tips & Tricks

  • For the right consistency, don’t worry if the dough seems wet, it sets perfectly after freezing.
  • For best results, microwave the chocolate chips in 15 to 30-second increments & stir in between to ensure the chips are melted and you do not burn the chocolate.
  • Add crushed peanuts or a drizzle of melted peanut butter for optional toppings.
  • This recipe is naturally gluten-free, but always check labels if using flavored protein powders.

How to Store Monster Cookie Protein Bark

Break into pieces once frozen and store in an airtight container in the fridge or freezer. If stacking, separate layers with parchment paper to avoid sticking.
