Thankfully, I was proven wrong! It truly makes the silkiest olive oil caramel, which honestly I never even knew was a thing. I used it to top my Vanilla Protein Ice Cream which was incredibly delicious. I think it would also be amazing in a homemade latte recipe. - Pure Maple Syrup. Don't use pancake syrup for this recipe. For the best flavor profile, opt for pure maple syrup.
- Sea Salt. This is optional, but I personally loved the salted caramel flavor it created. If you enjoy salt don't skip it.
Step by Step Instructions
1. Mix the caramel sauce. In a small mixing bowl, add equal parts olive oil & maple syrup along with a pinch of sea salt.
2. Emulsify the caramel. Whisk with a small whisk or fork vigorously for about 2-3 minutes until the caramel sauce is emulsified. It should thicken up & turn a golden hue, but it will not take on the texture of traditional caramel sauce. The thickness should be somewhat silkier than honey.

I ended up transferring the olive oil caramel to a mixing bowl & whisking it with a small whisk because it was getting a bit messy using the plate. You'll have more control this way & you'll be able to create a silkier, smoother caramel.
- Although it is best enjoyed fresh, you may store the caramel sauce in the fridge in an airtight container for up to 4 days for maximum freshness. You will have to re-whisk the sauce as the oil will separate.
