Jump to Recipe

The Viral Olive Oil Caramel sauce recipe is every bit as delicious as they're saying on tiktok - make it at home with just 3 simple ingredients in under 5 minutes! It's the perfect refined sugar free caramel topping for vanilla ice cream or you can add it to your morning coffee for a boost of healthy fats & caramel flavor.

I'm always skeptical of recipes that go viral on social media, even though I've had several of my own recipes go viral! While I know that I'm always testing my recipes multiple times to ensure they work & taste delicious, unfortunately I can't always say the same for some of the viral recipes I've tried from other creators over the years. So when I came across this Viral Olive Oil Caramel Sauce recipe, I truly didn't expect it to work, let alone taste delicious.

Thankfully, I was proven wrong! It truly makes the silkiest olive oil caramel, which honestly I never even knew was a thing. I used it to top my Vanilla Protein Ice Cream which was incredibly delicious. I think it would also be amazing in a homemade latte recipe. In fact, you can try pairing it with the Viral Cracking Latte & a scoop of vanilla ice cream for a truly decadent, viral treat!

Why You'll Love This Recipe

  • It is easy. This is truly the simplest caramel sauce recipe you'll ever make! It comes together in one bowl in less than 5 minutes.
  • It is delicious. Made with high quality olive oil, pure maple syrup and a pinch of salt, it has all the best flavor profiles covered.
  • It is healthy-ish. Not only is this caramel refined sugar free, but it's also got healthy fats & carbs to keep you feeling good. No sugar crashes here!

Viral Olive Oil Caramel Sauce Ingredients

  • Extra Virgin Olive Oil. Opt for the highest quality extra virgin olive oil you can access for the best flavor & most health benefits.
  • Pure Maple Syrup. Don't use pancake syrup for this recipe. For the best flavor profile, opt for pure maple syrup.
  • Sea Salt. This is optional, but I personally loved the salted caramel flavor it created. If you enjoy salt don't skip it.

Step by Step Instructions

1. Mix the caramel sauce. In a small mixing bowl, add equal parts olive oil & maple syrup along with a pinch of sea salt.

2. Emulsify the caramel. Whisk with a small whisk or fork vigorously for about 2-3 minutes until the caramel sauce is emulsified. It should thicken up & turn a golden hue, but it will not take on the texture of traditional caramel sauce. The thickness should be somewhat silkier than honey.

3. Enjoy! Pour over ice cream, pancakes, french toast or into a latte and enjoy!

Expert Tips & Tricks

  • Don't use a deep plate to mix this as you've probably seen in most of the videos on social media (including mine!) I ended up transferring the olive oil caramel to a mixing bowl & whisking it with a small whisk because it was getting a bit messy using the plate. You'll have more control this way & you'll be able to create a silkier, smoother caramel.
  • Although it is best enjoyed fresh, you may store the caramel sauce in the fridge in an airtight container for up to 4 days for maximum freshness. You will have to re-whisk the sauce as the oil will separate.
