Gluten Free Chicken Salad Ingredients & Ingredient Notes
- Chicken. You can use cubed or shredded chicken breast or chicken thighs depending on your preference. I like to use chicken tenders, the thinly sliced boneless skinless chicken breasts you can find in the grocery store. Whatever you do, do not use store-bought rotisserie chicken as these are often subject to cross contamination and are unfortunately not guaranteed to be gluten free or celiac safe.
- Celery. Add some delicious crunch by chopping up some celery. You can also add other crunchy veggies like green bell peppers or carrots. Note that if you are following a low fodmap diet, you can omit the celery or simply use 1 stalk.
- Grapes. Red or green grapes can be used depending on your preference. If you are following a low fodmap diet, 1 oz of red grapes is considered to be a low fodmap friendly serving size.
- Whole Grain Mustard. This is optional but has the best flavor & really elevates the chicken salad.
- Greek Yogurt. I prefer to use greek yogurt, like Siggis, because it is really high in protein and low in fat. You can also use sour cream, mayo, or a combination if you prefer.
- Fresh Herbs. Fresh dill, parsley and green onions are some of my favorites.
- Salt & Pepper. I like himalayan pink salt and fresh black pepper.
- Additional Ingredients: You can add different ingredients to this chicken salad like dijon mustard, dried cranberries or sweet apples.

- Combine all ingredients. Add all of your ingredients to a large mixing bowl. Using a silicone spatula or a wooden spoon, fold ingredients into each other until fully mixed. Season generously with salt & pepper, mixing once more to combine.

My favorite way to freeze chicken salad is with a vacuum seal foodsaver machine if you have one. It will last up to 3 months in the freezer. When you're ready to enjoy it again, place it in the fridge overnight to defrost then mix well before serving.
How long can chicken salad sit out?
If you're serving chicken salad at a gathering, it will be safe to sit out at room temperature for up to two hours, according to the FDA. If you're serving it at an outdoor gathering on a hot day, it will only keep for one hour.
How to tell if chicken salad is bad
If your chicken salad smells, well, bad then that's your sign not to eat it! It can often smell funky or sour which is a good indication it has spoiled. Other indications are if there is any mold or discoloration, then you know it's no longer safe to eat. A good rule of thumb to follow is if the chicken salad has been in the fridge for longer than 5 days, it's likely not safe to eat any longer.
