- Bone broth. You can use beef bone broth or chicken broth. Both work well, but beef broth gives the soup a richer, deeper flavor. My personal preference is to use Roli Roti brand because it's collagen rich and higher in protein.
- Tomato sauce and tomato paste. These create that classic lasagna-style base. If you only have marinara sauce, it will work, just keep in mind it may already be seasoned and a little saltier.
- Yellow onion. Adds quick, foundational flavor to the soup. Feel free to omit if you need an easier to digest option.
- Ground beef. Classic and hearty for lasagna flavor. You can also use ground turkey, ground chicken, Italian sausage or ground chicken sausage if you prefer.
- Italian seasoning and red pepper flakes. Bring all the familiar lasagna flavors together with a little warmth. Omit the red pepper flakes if you don't like heat.
- Gluten-free lasagna noodles. I like Jovial Foods brown rice noodles because they do not need to be boiled ahead of time and are SO close to the texture of regular pasta! Other gluten-free noodles work too, but cooking times can vary.
- Baby spinach. An easy way to add extra veggies that wilt quickly into the soup.
- Cottage cheese. Blended into the broth to make it creamy, with more added on top when serving. Once blended, you will not notice the texture. I also like to blend it before topping the soup for that ricotta cheese texture.
- Mozzarella cheese. Adds that melty, gooey lasagna finish.
- Olive oil, salt, and pepper. Used throughout for cooking and seasoning.
Gluten Free Lasagna Soup Step by Step Instructions
1. Cook onion & tomato paste. Heat olive oil in a large Dutch oven over medium heat, add the diced yellow onion and tomato paste, and cook for 3-4 minutes until fragrant and slightly caramelized.


2. Brown the beef. Add ground beef & seasonings and cook over medium-high heat until browned, breaking it up and scraping up the brown bits for extra flavor.


3. Remove beef & onion. Transfer the beef/onion mixture to a bowl and set aside.

4. Build the broth base. In the same pot, add bone broth and tomato sauce, warming over medium heat, then use an immersion blender to blend in cottage cheese until smooth (or blend separately, then pour back in).



5. Bring it together. Bring to a boil, then add the cooked beef/onion mixture back into the pot.

6. Cook the noodles. Add the lasagna noodles (broken into pieces) and boil until tender and al dente, stirring so nothing sticks.


7. Add spinach. Remove from heat and stir in baby spinach until wilted, about 1-2 minutes.


8. Serve. Ladle into bowls and top with whipped cottage cheese and mozzarella cheese (and fresh basil if you’re feeling fancy).
