I’ll walk you through it step by step so you get a cozy, satisfying dinner on the table even on the busiest weeknight!

A great lasagna soup recipe needs depth. That’s why we:

  • Cook onion with tomato paste first to concentrate flavor (this is where the magic happens).
  • Brown the beef and keep those brown bits (they’re pure flavor).
  • Blend cottage cheese into the broth for creaminess (you get that creamy vibe without relying on heavy cream).
  • Cook gluten-free lasagna noodles right in the soup so the broth turns rich and cozy.

Gluten Free Lasagna Soup Ingredients & Tested Substitutions

  • Bone broth. You can use beef bone broth or chicken broth. Both work well, but beef broth gives the soup a richer, deeper flavor. My personal preference is to use Roli Roti brand because it's collagen rich and higher in protein.
  • Tomato sauce and tomato paste. These create that classic lasagna-style base. If you only have marinara sauce, it will work, just keep in mind it may already be seasoned and a little saltier.
  • Yellow onion. Adds quick, foundational flavor to the soup. Feel free to omit if you need an easier to digest option.
  • Ground beef. Classic and hearty for lasagna flavor. You can also use ground turkey, ground chicken, Italian sausage or ground chicken sausage if you prefer. 
  • Italian seasoning and red pepper flakes. Bring all the familiar lasagna flavors together with a little warmth. Omit the red pepper flakes if you don't like heat.
  • Gluten-free lasagna noodles. I like Jovial Foods brown rice noodles because they do not need to be boiled ahead of time and are SO close to the texture of regular pasta! Other gluten-free noodles work too, but cooking times can vary.
  • Baby spinach. An easy way to add extra veggies that wilt quickly into the soup.
  • Cottage cheese. Blended into the broth to make it creamy, with more added on top when serving. Once blended, you will not notice the texture. I also like to blend it before topping the soup for that ricotta cheese texture.
  • Mozzarella cheese. Adds that melty, gooey lasagna finish.
  • Olive oil, salt, and pepper. Used throughout for cooking and seasoning.

Gluten Free Lasagna Soup Step by Step Instructions

1. Cook onion & tomato paste. Heat olive oil in a large Dutch oven over medium heat, add the diced yellow onion and tomato paste, and cook for 3-4 minutes until fragrant and slightly caramelized.

2. Brown the beef. Add ground beef & seasonings and cook over medium-high heat until browned, breaking it up and scraping up the brown bits for extra flavor.

3. Remove beef & onion. Transfer the beef/onion mixture to a bowl and set aside.

4. Build the broth base. In the same pot, add bone broth and tomato sauce, warming over medium heat, then use an immersion blender to blend in cottage cheese until smooth (or blend separately, then pour back in).

5. Bring it together. Bring to a boil, then add the cooked beef/onion mixture back into the pot.

6. Cook the noodles. Add the lasagna noodles (broken into pieces) and boil until tender and al dente, stirring so nothing sticks.

7. Add spinach. Remove from heat and stir in baby spinach until wilted, about 1-2 minutes.

8. Serve. Ladle into bowls and top with whipped cottage cheese and mozzarella cheese (and fresh basil if you’re feeling fancy).

Gluten Free Lasagna Soup FAQs (So You Don’t Have to Stress Mid-Recipe!)

Do I really have to remove the beef and onions?
It’s the easiest way to get a smooth, creamy broth when you blend in the cottage cheese. If you don’t mind a more rustic texture, you can leave it in and add the cottage cheese.

Will the cottage cheese taste weird?
Nope. Once blended into the broth, it gives a creamy, slightly cheesy base similar to that of ricotta cheese.

What if my soup gets too thick?
Gluten-free noodles love to soak up liquid. Add a splash of broth (or water) when reheating, and you’re back to perfect.

How do I keep gluten-free noodles from getting mushy?
Cook just to al dente, then remove from heat. They’ll keep softening as they sit in the hot soup. I do recommend using Jovial Foods gluten free lasagna noodles if you can because they really stand up to the test of reheating.

Can I use different noodles?
Yes. GF noodles vary a lot, some cook faster (like uncooked brown rice pasta) and some hold up longer (like corn-based noodles). Just taste-test a minute or two early.

Can I add extra veggies?
Absolutely. Bell pepper, zucchini, mushrooms, eggplant, anything you’d put in a lasagna-ish sauce works. Add them when you sauté the onion.

Storage & Reheating

  • Store in an airtight container for 3 to 4 days.
  • Reheat gently and add a splash of broth if needed (noodles thicken the soup as it sits).

  • 24 ounces high-protein beef bone broth or chicken bone broth I like Roli Roti brand
