This Gluten-Free Chicken Salad recipe is the perfect easy, healthy protein packed meal prep recipe. Ingredients
  

  • 2 lbs cooked chicken cubed or shredded
  • ¾ cup greek yogurt can sub sour cream or mayo
  • 2 tablespoon whole grain mustard can sub dijon
  • ½ cup grapes chopped
  • 2 stalks celery chopped
  • ¼ cup green onions chopped
  • 2 tablespoon fresh dill finely chopped
  • 2 tablespoon fresh parsley finely chopped
  • Salt & pepper to taste

Instructions
 

  • Combine all ingredients. Add all of your ingredients to a large mixing bowl. Using a silicone spatula or a wooden spoon, fold ingredients into each other until fully mixed. Season generously with salt & pepper, mixing once more to combine.

Notes

Note: If you are not using leftover chicken, I recommend airfrying your chicken breasts for the fastest preparation. Simply place in a pre-greased air fryer basket and cook for 9-11 minutes at 380F or until internal temperature is 165F. Place in the fridge to cool completely before cubing or shredding.
 
Store in an airtight container up to 5 days in the fridge.
