Ingredients
  

  • 1 cup cottage cheese
  • 1 cup cheddar cheese
  • 2 teasponns taco seasoning

  • jalapeños or bell peppers diced
  • onion skip for easier to digest
  • pico de gallo
  • black beans or cooked ground beef

Instructions
 

  • Blend the base. In a food processor, blender, or using an immersion blender, combine 1 cup cottage cheese and 2 teaspoon taco seasoning. Blend until smooth.
  • Heat and melt. Pour the mixture into a small pot or microwave-safe bowl. Stir in 1 cup shredded cheddar cheese and heat on low heat (or in the microwave in 10 second increments) until the cheese is fully melted and the dip is smooth.
  • Customize. Optional: stir in diced green chilies, jalapeños, or cooked ground beef for extra flavor.
  • Serve it up. Transfer to a serving dish and top with green onion, pico de gallo, or a drizzle of hot sauce. Serve warm with your favorite tortilla chips or veggies.
