There's nothing better than a refreshing drink on a hot summer's day, especially when there's no chance of a buzz involved! When the temps rise and you find yourself spending more time outdoors, poolside, at BBQs, or at the beach house for the weekend cocktails are sure to closely follow. But what do you do when you have fitness goals, lots planned the next day, or simply just don't like being buzzed? You reach for a deliciously refreshing Blueberry Mojito Mocktail + party on!

If you are following a low FODMAP diet, you might not know that there are some low FODMAP alcohol types, however rum is not one of them. That's why I love using Ritual Zero Proof Rum Alternative to make mocktails that otherwise would require rum!

Low FODMAP Tip: If you would like to make this Mocktail into a low FODMAP friendly cocktail, simply swap the rum alternative for vodka or gin for a refreshing summer cocktail that is low FODMAP friendly!

Ingredients + Tested Substitutions

  • Blueberries: You can't make a blueberry mojito without blueberries! But, if you'd like to make this a classic mojito mocktail, simply omit blueberries from the simple syrup and do not muddle them in with the mint.
  • Rum Alternative: Since rum is not low FODMAP friendly, this rum alternative is the perfect addition to a blueberry mojito mocktail. If you want to make this into a cocktail that is still low FODMAP friendly, simply swap in vodka or gin. You can also omit + add extra seltzer to keep this alcohol-free.
  • Pineapple Juice: Pineapple juice is added for an extra dose of sweetness since we use monk fruit sugar to sweeten the simple syrup. It can be omitted if preferred.

Ingredients
  

For the Blueberry Mint Simple Syrup

  • 1 cup Water
  • 1 cup Monk Fruit or sugar of choice
  • ⅔ cup Frozen Blueberries
  • 1 tablespoon Lemon Juice
  • 1 bunch Mint Leaves

For the Blueberry Mojito

  • 1 oz Ritual Zero Proof Rum Alternative
  • 2 oz Blueberry Mint Simple Syrup
  • 1 oz Lime Juice
  • 1 oz Pineapple Juice
  • Lime Seltzer
  • Mint + Lime Wheels for Garnish
  • Fresh Blueberries for Muddling

Instructions
 

Make the Blueberry Mint Simple Syrup

  • In a small saucepan over medium heat, boil water. Once water is boiling, add sugar and reduce to a simmer, stirring often until all sugar has dissolved.
  • Add blueberries, lemon juice, and mint continuing to simmer about 10 minutes.
  • Strain into a mason jar or container with lid and store in the fridge up to 1 week. Makes 4 servings.

Make the Blueberry Mojito

  • In a cocktail shaker, muddle together fresh blueberries + mint leaves. Add ice, simple syrup, rum alternative, pineapple juice + lime juice, shaking vigorously to combine.
  • Strain into a collins glass over ice, top with lime seltzer + garnish with lime and fresh mint.

Notes

Use monk fruit if you are avoiding refined sugars or looking for a lower carb/lower calorie version of a mojito, otherwise feel free to substitute in white sugar or coconut sugar when making the blueberry mint simple syrup.
