Ingredients
  

For the Blueberry Mint Simple Syrup

  • 1 cup Water
  • 1 cup Monk Fruit or sugar of choice
  • cup Frozen Blueberries
  • 1 tablespoon Lemon Juice
  • 1 bunch Mint Leaves

For the Blueberry Mojito

  • 1 oz Ritual Zero Proof Rum Alternative
  • 2 oz Blueberry Mint Simple Syrup
  • 1 oz Lime Juice
  • 1 oz Pineapple Juice
  • Lime Seltzer
  • Mint + Lime Wheels for Garnish
  • Fresh Blueberries for Muddling

Instructions
 

Make the Blueberry Mint Simple Syrup

  • In a small saucepan over medium heat, boil water. Once water is boiling, add sugar and reduce to a simmer, stirring often until all sugar has dissolved.
  • Add blueberries, lemon juice, and mint continuing to simmer about 10 minutes.
  • Strain into a mason jar or container with lid and store in the fridge up to 1 week. Makes 4 servings.

Make the Blueberry Mojito

  • In a cocktail shaker, muddle together fresh blueberries + mint leaves. Add ice, simple syrup, rum alternative, pineapple juice + lime juice, shaking vigorously to combine.
  • Strain into a collins glass over ice, top with lime seltzer + garnish with lime and fresh mint.

Notes

Use monk fruit if you are avoiding refined sugars or looking for a lower carb/lower calorie version of a mojito, otherwise feel free to substitute in white sugar or coconut sugar when making the blueberry mint simple syrup.
