Pancake Mix. I love using Simple Mills grain free pumpkin pancake mix, but you can use regular pancake mix as well. Krusteaz pancake mix is another brand I love that has great gluten free options.
Pumpkin Puree. Make sure you're using pumpkin puree and not pumpkin pie filling. This acts as a binder in place of using eggs, but if you'd like to add a little more protein you can substitute ¼ cup of the pumpkin puree for 1 egg.
Almond Milk. This is just my personal preference when it comes to non-dairy milk. You may use whatever type of milk you prefer.
Protein Powder. Use your favorite vanilla or unflavored protein powder to add more protein. Make sure you use a protein powder you actually enjoy the taste of!
Optional Glaze Ingredients: You'll need powdered monk fruit or powdered sugar & cinnamon in addition to more almond milk & pumpkin puree for the optional glaze.
Pumpkin Pancake Mix Donuts Step by Step Instructions
- Pre-heat oven to 350 fahrenheit and grease a silicone donut pan with cooking spray.
- Mix pancake batter. In a large mixing bowl, add pancake mix, protein powder, milk & pumpkin puree and whisk until a smooth batter forms.
3. Bake. Pour batter into donut molds, place the donut molds onto a baking sheet and bake for 18-20 minutes or until a toothpick comes out clean.
