These easy Pumpkin Pancake Mix Donuts are the perfect fall treat to bake the next time you're craving homemade donuts. It's also a great way to sneak a little extra protein into your day while still satisfying your sweet tooth in a healthy & satisfying way. These easy donuts are made with just 4 simple ingredients including your favorite pancake mix!

Ingredients
  

For the Donuts

  • 2 cups gluten free pumpkin pancake mix or regular pancake mix
  • 1 cup almond milk or milk of choice
  • ½ cup pumpkin puree you can sub in one egg for ¼ cup of the pumpkin puree for more protein

For the Icing

  • c powdered monk fruit or powdered sugar
  • 1 tablespoon almond milk
  • 1 tablespoon pumpkin purée
  • ¼ teaspoon cinnamon

Instructions
 

  • Pre-heat oven to 350 fahrenheit and grease a silicone donut pan with cooking spray.
  • Mix pancake batter. In a large mixing bowl, add pancake mix, protein powder, milk & pumpkin puree and whisk until a smooth batter forms.
  • Bake. Pour batter into donut molds, place the donut molds onto a baking sheet and bake for 18-20 minutes or until a toothpick comes out clean.
  • Make the glaze. While the donuts are baking, prepare the glaze in a separate bowl whisking the dry ingredients together first, then adding the wet ingredients, continuing to whisk vigorously so no clumps of powdered sugar remain.
  • Cool & glaze. Once donuts have baked, allow them to cool on a wire rack for around 20 minutes before adding the glaze. To glaze, dunk the tops of the donuts into the glaze to full coat the tops.

Expert Tips & Tricks

  • For more perfectly round donuts, you can add the batter to a piping bag and pipe into the donut pan.
  • Make a maple glaze by adding 2 teaspoon of maple syrup to the glaze mixture.
  • Mix chocolate chips into the batter to make pumpkin chocolate chip donuts.
  • If you'd like to add a bit more protein you can substitute ¼ cup of the pumpkin puree for one egg.
  • Add chai spice mix for pumpkin chai pancake donuts.
  • Allow the donuts to cool fully on a wire rack at room temperature before adding the glaze.
