These easy Pumpkin Pancake Mix Donuts are the perfect fall treat to bake the next time you're craving homemade donuts. It's also a great way to sneak a little extra protein into your day while still satisfying your sweet tooth in a healthy & satisfying way. These easy donuts are made with just 4 simple ingredients including your favorite pancake mix!
½cuppumpkin pureeyou can sub in one egg for ¼ cup of the pumpkin puree for more protein
For the Icing
⅔cpowdered monk fruitor powdered sugar
1tablespoonalmond milk
1tablespoonpumpkin purée
¼teaspooncinnamon

Instructions
Pre-heat oven to 350 fahrenheit and grease a silicone donut pan with cooking spray.
Mix pancake batter. In a large mixing bowl, add pancake mix, protein powder, milk & pumpkin puree and whisk until a smooth batter forms.
Bake. Pour batter into donut molds, place the donut molds onto a baking sheet and bake for 18-20 minutes or until a toothpick comes out clean.
Make the glaze. While the donuts are baking, prepare the glaze in a separate bowl whisking the dry ingredients together first, then adding the wet ingredients, continuing to whisk vigorously so no clumps of powdered sugar remain.
Cool & glaze. Once donuts have baked, allow them to cool on a wire rack for around 20 minutes before adding the glaze. To glaze, dunk the tops of the donuts into the glaze to full coat the tops.

For more perfectly round donuts, you can add the batter to a piping bag and pipe into the donut pan.
Make a maple glaze by adding 2 teaspoon of maple syrup to the glaze mixture.
