The first time I made these pumpkin brownies, I honestly thought, "why did it take me so long to make these?". Now I plan to keep a pan of these brownies in the fridge through the whole fall season, because a cold square of these healthy pumpkin brownies with coffee is somehow better than a warm one (which are still incredibly delicious by the way).

Pumpkin Brownies Ingredients (& Tested Substitutions)
For the brownie
Full-fat cottage cheese. The secret weapon. It blends completely smooth and gives these fudgy brownies their thick, dense, protein-packed base. Don't skip the full-fat it matters for texture.
Drippy peanut butter. You want the kind that's runny and natural, not the stiff stuff. This adds healthy fats, richness, and flavor. I prefer to use Maranatha peanut butter. If you can't do peanut butter, you can do almond butter.
Unsweetened cocoa powder. This is your primary chocolate flavor. I use 1 full cup cocoa powder here for a deep, rich chocolate taste.
Coconut sugar. This recipe skips refined white sugar entirely by using coconut sugar, which adds a wonderful caramel-like depth that pairs perfectly with the spices. Coconut sugar is my go-to, but a cup zero calorie sweetener like Swerve or Lakanto works as a 1:1 swap.
Chocolate protein powder (optional): Adding a scoop of your favorite chocolate protein powder takes the protein content up even further. I use and love Equip Foods Prime Bar Chocolate (code PRETTYDELISH).

Healthy Pumpkin Brownies Step by Step Instructions
1. Prepare to bake. Preheat the oven to 350 degrees Fahrenheit. Line an 8x8 baking pan with parchment paper for easy removal and set aside.
2. Whip the cottage cheese. Put the cottage cheese in the food processor and blend until smooth and fluffy, about 1-2 minutes. Leave in the food processor until you are ready for it.

3. Mix the batter. Transfer the smooth cottage cheese to a mixing bowl and add peanut butter and the remaining dry ingredients. Using a fork or silicone spatula, mix the batter until combined. Note that this batter will be very thick, much thicker than traditional brownie recipes.





4. Make the pumpkin cream cheese. In a small microwave safe bowl, add cream cheese and microwave for 30 seconds until soft. Add the pumpkin puree, then the remaining ingredients and mix with an electric mixer or fork until smooth.




5. Combine brownie base & pumpkin cream cheese. Because the batter is very thick, the pumpkin cream cheese doesn’t swirl in like a traditional brownie (that’s okay, trust the process!). Spoon it on top of the brownie base and using a spoon or spatula, gently fold sections of the pumpkin cream cheese into the brownie base until they’re slightly combined. Use the back of a spoon or spatula to smooth it out into an even layer.




6. Bake. Bake for 20-30 minutes for fudgy brownies or 35 minutes for cakey brownies.
7. Cool & Enjoy! Once the brownies are finished baking, leave them in the pan to cool for best results. If they’re feeling pretty gooey, I like to pop them in the fridge for 10-15 minutes to set. Once they have cooled, slice into squares and enjoy.



Expert Tips & Tricks
- Blend the cottage cheese until completely smooth. Any lumps left in the cottage cheese will show up in your final brownie. Take an extra 30 seconds to make sure it's fully pureed.
- Don't over bake. These are meant to be fudgy brownies. Pull them at 15-20 minutes and they'll continue to firm up as they cool. Check your level of doneness with a toothpick it should come out with moist crumbs, not wet batter.
- Use drippy peanut butter or almond butter. Stiff or old nut butter will make the batter even harder to mix and can affect the final texture. If your peanut butter has separated, stir it well before measuring.

Can I taste the cottage cheese?
Not at all! Once blended smooth and baked, the cottage cheese is completely undetectable. It just adds creaminess, protein, and that dense, fudgy texture.
Can I make these dairy free?
Unfortunately no as some of the main ingredients here are cottage cheese and cream cheese. There are some vegan (no dairy versions) of cream cheese that actually work out, but I haven't found a dairy free cottage cheese that actually works just as well.
Can I use a different sweetener?
Yes! Coconut sugar is my go-to, but a cup zero calorie sweetener like Swerve or Lakanto works as a 1:1 swap.
What type of protein powder works best?
Chocolate beef isolate, whey protein powder or a casein blend are your best options for best results. Plant-based proteins can make the texture gummy or dry. Are these low sugar?
These brownies are lower in sugar than traditional pumpkin brownies! Using coconut sugar keeps the glycemic impact lower than refined white sugar, and the recipe skips the sugar overload of any other pumpkin brownie out there. If you swap in a cup zero calorie sweetener, these get even lower.

How to Store The Pumpkin Brownies
Store these brownies in an airtight container in the fridge for up to 5 days. You can also keep them on the counter for a day or two, but I prefer the texture chilled because they firm up a bit more and get nice and chewy.
