Ingredients
  

For the Gingerbread Truffles

  • ½ cup almond flour
  • ½ cup vanilla protein powder
  • ½ cup cashew butter
  • ¼ cup + 1 tablespoon real maple syrup
  • 3 tablespoons molasses
  • ½ teaspoon cinnamon
  • ½ teaspoon ginger
  • teaspoon clove

For the Grinch Candy Coating

  • 8 ounces white chocolate
  • 1-2 teaspoons green food coloring I used Supernatural brand
  • Red heart sprinkles

Instructions
 

  • Mix the dough: In a large bowl, combine almond flour, protein powder, cinnamon, ginger, and clove. Add cashew butter, maple syrup, and molasses. Stir with a fork until a dough forms. If crumbly, add 1 teaspoon milk at a time until smooth.
  • Roll into balls: Using a cookie scoop, portion about 2 tablespoons per truffle and roll between your hands. Place on a parchment paper-lined baking sheet.
  • Melt the chocolate: In a small microwave-safe bowl, melt white chocolate in 15-second intervals until smooth.
  • Color it green: Stir in green food coloring or candy melts until you reach your desired Grinch green.
  • Coat the truffles: Dip each ball into the chocolate using a fork, letting excess drip off. Top with a red heart sprinkle.

How to Store Grinch Dessert Truffles

Keep them in an airtight container in the fridge for up to 5 days, or freeze for up to a month. Layer with plastic wrap between to prevent sticking.
