Sugar Free Fudgesicles (High Protein, Dairy-Free)

Not only are these Sugar-Free Fudgesicles incredibly delicious, put they pack a few health benefits too! These pudding pops are made with simple ingredients that not only support a dairy-free high protein diet, but also support healthy hormones, too. This simple recipe is perfect for the whole family!

Equipment

  • Popsicle Molds
  • Wooden Popsicle Sticks
  • Blender

Ingredients
  

  • 1 14 oz can full fat coconut milk
  • 1 cup canned sweet potato
  • 2 scoops chocolate protein powder
  • 2 tablespoon collagen peptides
  • ½ cup dark cocoa powder unsweetened
  • 1 teaspoon vanilla extract
  • 1 pinch of sea salt
  • 1 tablespoon dark chocolate chips melted for drizzling, optional

Instructions
 

  • Make the Fudge Pop Mixture. Add all ingredients except for the dark chocolate chips to a blender & blend until smooth.
  • Pour into Popsicle Molds. Pour the chocolate mixture evenly into popsicle molds. Be careful to leave just a little bit of room & not overflow the mold. Insert wooden popsicle sticks into the molds. Be careful not to press too hard when inserting the wooden sticks as the popsicle mixture can easily spill.
  • Freeze. Freeze the fudge pops for at least 8 hours up to overnight.
  • Drizzle with Chocolate. If you're using the chocolate chips, melt them in the microwave in 10 second increments, being careful not to burn or seize the chocolate. Carefully drizzle over the popsicles & enjoy!
