Salmon Caesar Salad

This delicious Caesar Salad with Salmon recipe will quickly become a new favorite! It whips up in just a few minutes with a few simple ingredients and is perfect for lunch or dinner. High in protein, low fodmap and easy to digest, you can't beat this simple, healthy meal!

Ingredients
  

  • 4 oz wild caught salmon fresh or frozen, defrosted
  • 3 cups shredded lettuce
  • 1-2 tablespoon Caesar dressing low fodmap certified
  • 1-2 tablespoon parmesan cheese shaved or shredded
  • ¼ cup gluten free croutons
  • ¼ teaspoon black pepper
  • ¼ teaspoon lemon herb seasoning low fodmap certified
  • pinch of salt to taste

Instructions
 

  • Prep the salmon. Pat the salmon fillets dry with a paper towel and season to taste with salt, black pepper and lemon herb seasoning.
  • Cook the salmon. Grease your pan or air fryer with cooking spray or olive oil. If you're using an air fryer, preheat it at 375F otherwise heat the pan over medium-high heat on the stove top. Place the salmon steak skin side down into the air fryer or the pan once hot and cook for 8-10 minutes.
  • Prep the salad base. While the salmon cooks, add shredded lettuce, parmesan, Caesar dressing and croutons to a large mixing bowl. Season with extra salt & black pepper if desired, then toss to combine.
  • Plate & serve. Once salmon is fully cooked, plate the salad and top it with the salmon.
