Instructions
Whip the cottage cheese mixture. Add cottage cheese to a food processor or high-speed blender, then add the protein powder (or unsweetened cocoa powder if using) & maple syrup or sweetener of choice. Pulse until texture is smooth & creamy, no lumps of cottage cheese or protein powder remaining.
Garnish & serve. Scoop the high protein mousse into a cup or ramekin and top with your favorite whipped topping & fresh berries.

How to Store Cottage Cheese Mousse
If you want to meal prep the chocolate cottage cheese mousse by doubling or tripling the recipe, you may store leftovers in an airtight container in the fridge for up to one week. You can do the same if you do not finish your single serving of mousse by adding any leftovers to an airtight container and storing in the fridge. I do not recommend freezing the cottage cheese mousse.
If you would prefer not to use protein powder, you may substitute 2 tablespoons of unsweetened cocoa powder instead. Note the protein content will be lower.
If using protein powder, please remember to choose a brand you like the taste of (if you're not using the brand I recommend) or you will not like the taste of your chocolate protein mousse!
