Ingredients
  

For The Strawberry Syrup

  • ½ cup TruEats Monk Fruit Sweetener
  • 2 cups strawberries fresh or frozen
  • 1 cup water
  • 1-2 tablespoon orange zest

For The Strawberry Negroni

  • 2 oz Campari
  • 2 oz gin
  • 2 oz sweet vermouth
  • 2 oz strawberry syrup

Instructions
 

  • Make the Strawberry Simple Syrup. In a medium pot over medium high heat, add water and TruEats Monk Fruit Sweetener, whisking gently to begin dissolving the monk fruit. Next, add whole strawberries to the pot, fresh or frozen both will work. Stir occasionally, gently smashing and breaking up the strawberries as you stir. Allow the syrup to come up to a boil, then immediately reduce heat, simmering for 12-15 minutes. Add 1 tablespoon of fresh orange zest and stir until combined.
  • Strain the Strawberry Syrup. After simmering 12-15 minutes, place a fine mesh strainer over the lid of a heat proof glass jar. Ladle the strawberries and juices into the strainer a little at a time, gently pressing down on the solids to ensure the liquid passes through the strainer and they remain behind. Repeat the process until you've strained all of the liquid from the solids. Cool the syrup at room temperature or in the fridge before serving.
  • Build the Strawberry Negroni. In a mixing glass, add 2 oz each of the Campari, gin, sweet vermouth and strawberry simple syrup. Stir gently with a cocktail spoon to mix. Pour over ice and serve in rocks glasses.

Notes

Strawberry simple syrup can be made ahead of time and stored in an airtight container in the fridge. It will keep up to one week.
