These Simple Slow Cooker Beef Short Ribs are the perfect cozy season delicious meal. The best part is, the slow cooker does the majority of the heavy lifting for you, making this a great slow cooker recipe for the holiday season or cold weather meal prep. It uses simple ingredients & is low fodmap friendly as well as suitable for a paleo diet.
Prepare the short ribs. In a large mixing bowl, combine spices, cocoa powder, salt & pepper whisking with a fork until homogenous. Add the beef short ribs to the bowl, tossing to evenly coat the cuts of meat. Once coated, sear the short ribs in a dutch oven or a large skillet of medium heat, about one minute on each side.
Add everything to the slow cooker. Once all short ribs have been seared, add any leftover spice rub and all remaining ingredients to the basin of your slow cooker, stirring gently to combine.
Cook. Cook the short ribs on high for 4 hours or low for 6-8 hours in the crock pot until the meat is tender.
Notes
Omit the red wine for paleo and add in an additional 1 ¼ cups of bone broth along with ¼ cup of coconut aminos or balsamic vinegar.
Do not skip the step of searing the short ribs. Searing the short rib prior to slow cooking helps bring out the flavors in both the meat as well as the spices, adding to the savory depth of flavor.
