Equipment

  • Measuring Cups + Spoons
  • 1 Whisk or Hand Mixer
  • 1 Large Mixing Bowl
  • 1 Serving Bowl, Glass, or Ramekin
  • 1 Spoon

Ingredients

  • 1 cup plain or vanilla greek yogurt or skyr
  • 1 scoop banana protein powder , can sub vanilla
  • 1 teaspoon maple syrup optional, only if your protein powder isn’t sweet enough
  • 3-4 gluten free vanilla wafers
  • ½ banana , diced or thinly sliced

Instructions

  • Mix the pudding. In a large mixing bowl add yogurt, protein powder, and maple syrup (optional).
  • Whisk. Whisk ingredients together with a whisk or a hand mixer until fully incorporated and no clumps of protein powder remain.
  • Layer. Pour half of the banana pudding into a bowl or ramekin. Put about half of your diced (or thinly sliced) banana and 2-3 gluten-free vanilla wafers on top. Then put the other half of the pudding on top.
  • Add toppings. Sprinkle with the rest of your gluten free vanilla wafers (I like to crush them for the topping) and add the rest of the diced banana slices and enjoy!

Notes

*For a dairy free option use your favorite dairy free vanilla yogurt (CocoJune makes a great vanilla protein yogurt) and mix with your favorite dairy free vanilla protein powder. I like Equip Foods best.
