Instructions
Preheat the oven. Preheat to 375°F and lightly coat your prepared baking dish with nonstick cooking spray or olive oil.
Cube the bread. Cube your gluten-free breads (or preferred kind of bread) and place them on the bottom of the baking dish in an even layer.
Whisk the egg mixture. In a large bowl, whisk together the eggs, milk, cottage cheese, shredded cheese, turkey bacon, garlic & herb seasoning, red pepper flakes, and a pinch of salt & black pepper.
Pour over the bread. Pour the egg mixture evenly over the cubed bread, making sure everything is coated and the mixture settles into the bottom of the baking dish.
Add the breakfast sausage. Sprinkle the diced breakfast sausage rounds over the top.
Bake. Bake for 30–40 minutes, or until the eggs are set and the top is lightly golden. Tent with aluminum foil if the top browns too quickly.
Cool and serve. Let the casserole rest for 5–10 minutes before slicing. Serve warm with fresh fruit and potatoes on the side.
