Ingredients
  

  • 12 large eggs
  • 1 ½ cups cottage cheese full-fat or low-fat
  • 1 cup cooked turkey sausage crumbled
  • 1 cup shredded cheddar cheese
  • 1 red bell pepper diced
  • ½ onion diced (optional, omit for easy to digest)
  • 1 cup fresh spinach chopped
  • 1 cup milk of choice
  • 1 teaspoon garlic powder optional, omit for easy to digest
  • 1 teaspoon onion powder optional, omit for easy to digest
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • Cooking spray or parchment paper for the baking dish

Instructions
 

  • Prep the baking dish. Preheat oven to 350°F. Lightly grease a baking dish or line with parchment paper.
  • Cook the sausage. If your sausage isn't already pre-cooked, in a skillet over medium heat, cook sausage until browned. Set aside.
  • Mix the egg mixture. In a large mixing bowl, whisk eggs, cottage cheese, whole milk, garlic powder, onion powder, salt, and black pepper until smooth. Add in shredded cheese, diced red peppers, sausage, onion & green onion if using.
  • Assemble the casserole. Pour the mixture into the casserole dish and top with chopped spinach, gently mixing in with a fork. Sprinkle on additional cheese and green onion if desired.
  • Bake. Bake for 35 to 40 minutes, or until the center is set and the top is lightly golden.
  • Cool & slice. Let cool 10 minutes for the fluffy eggs to set before slicing into individual portions.

Notes

Tips & Tricks

  • Blend your cottage cheese for an ultra-smooth cottage cheese blend if you dislike curds.
  • Add pepper jack cheese and hot sauce for a delicious kick of heat.
  • Cooking veggies first removes moisture and prevents a watery egg bake.
  • For best results, don’t overbake the casserole, pull it when the center is just set.

Storage & Reheating

  • Refrigerate: Store leftovers in an airtight container 4 to 5 days.
  • Freeze: Store slices in a freezer-safe container 1 to 2 months.
  • Reheat: 15-20 minutes in a 300°F oven or microwave 60-90 seconds.
