A creamy, cheesy, protein-packed casserole made with cottage cheese, eggs, sausage, and veggies. The perfect way to meal prep easy breakfasts for busy mornings! Delicious, nutrient-dense, and ready in under 40 minutes.

Instructions
Prep the baking dish. Preheat oven to 350°F. Lightly grease a baking dish or line with parchment paper.
Cook the sausage. If your sausage isn't already pre-cooked, in a skillet over medium heat, cook sausage until browned. Set aside.
Mix the egg mixture. In a large mixing bowl, whisk eggs, cottage cheese, whole milk, garlic powder, onion powder, salt, and black pepper until smooth. Add in shredded cheese, diced red peppers, sausage, onion & green onion if using.
Assemble the casserole. Pour the mixture into the casserole dish and top with chopped spinach, gently mixing in with a fork. Sprinkle on additional cheese and green onion if desired.
Bake. Bake for 35 to 40 minutes, or until the center is set and the top is lightly golden.
Cool & slice. Let cool 10 minutes for the fluffy eggs to set before slicing into individual portions.

Blend your cottage cheese for an ultra-smooth cottage cheese blend if you dislike curds.
Add pepper jack cheese and hot sauce for a delicious kick of heat.
Cooking veggies first removes moisture and prevents a watery egg bake.
