This gluten free Funfetti 3 Ingredient Mug Cake Recipe is the ultimate easy mug cake made with just a few simple ingredients.   • Fork or small whisk

Ingredients
  

  • 3 tablespoons gluten free funfetti cake mix
  • 2 tablespoons applesauce
  • 2 tablespoons milk of choice
  • vanilla frosting optional for topping
  • rainbow sprinkles optional for topping

Instructions
 

  • Mix the cake batter. Lightly grease a microwave safe coffee mug with olive oil or your favorite cooking spray. Add the box cake mix, applesauce and milk to the mug and mix well using a fork or small whisk until you achieve a smooth batter and no clumps of dry ingredients remain.
  • Microwave. Place the mug in the microwave & heat for 60 seconds. After 60 seconds, check for doneness using a toothpick inserted into the center of the cake. If it is not fully cooked, an easy way to avoid over cooking the mug cake is to reheat it in 5 second increments.
  • Add toppings. Add toppings like frosting & sprinkles if using & enjoy!

Notes

Expert Tips & Tricks

    • Cooking time may vary depending on the strength of your microwave. If the mug cake is not fully cooked after 60 seconds, reheat it in the microwave in 5 second increments to ensure you end up with a mug cake that has a moist texture and it does not become rubbery.
    • If you do not have a microwave-safe mug you can use a small ramekin instead.
    • Top the microwave mug cake with vanilla frosting & sprinkles or add a scoop of vanilla ice cream for a truly decadent dessert!
    • Instead of using funfetti cake mix, use vanilla cake mix and top the mug cake with delicious toppings like caramel sauce, raspberry jam, fresh berries, or natural peanut butter.
    • Add 1-2 tablespoons of your favorite protein powder for a little extra protein boost.
  • You can substitute the apple sauce for equal amount of mashed banana or pumpkin puree if that is all you have on hand, just note this will change the flavor and could also change the color but will work just fine.
