This 3 Ingredient Chocolate Protein Mug cake is the perfect sweet treat to make the next time you have a chocolate craving but also want to hit your protein goals. It whips up in around 2 minutes and is made with simple ingredients you already have on hand, so you can enjoy a healthy dessert as soon as the craving strikes! It's the perfect post-workout snack or healthier dessert option.

Equipment

  • 1 Microwave Safe Mug or ramekin
  • 1 small whisk or fork

Ingredients
  

  • 1 scoop chocolate protein powder pea protein or whey protein work best
  • 1 large egg
  • 2 tablespoon milk milk of choice
  • 1 tablespoon maple syrup optional, for extra sweetness
  • 1 tablespoon cocoa powder optional, for extra richness
  • 1 tablespoon chocolate chips optional, for fun!

Instructions
 

  • Build the mug cake. Add the chocolate protein powder to a lightly greased mug or ramekin, then add the egg & milk. If you're using it, you may also add the maple syrup and cocoa powder here.
  • Mix. Using a fork or a small whisk, mix the cake batter until smooth & there are no clumps of protein powder remaining. The texture should resemble a thick chocolate mousse. If you're adding chocolate chips, fold them in now.
  • Microwave. Place the mug in the microwave and microwave for 30 seconds. If the mug cake is not fully set, microwave for another 10 seconds. Do not exceed 50 seconds as most protein powders will get a rubbery texture after that point.

Notes

I tested this recipe using several types of protein powder and found that pea protein & whey protein powder work the best. I do not recommend using a grass fed beef isolate protein as this type of protein powder will not work at all. If you only have this type of protein powder on hand, you can add ⅓ cup of almond flour or oat flour to the recipe. It is important to note that if you do not like the taste of your protein powder, you will either want to find one that you do enjoy or add the additional maple syrup & cocoa powder for best results.

What if the mug cake is too liquidy?
Occasionally, depending on your microwave, you may find that your protein mug cake hasn’t fully cooked through after following the instructions and is still a bit liquidy on the inside. If this happens, simply place the mug back in the microwave and cook in short 5 second intervals until a cake-like texture is achieved.
How to store chocolate protein mug cake
Mug cakes are best eaten right away. I do not recommend making this recipe ahead of time & storing for later for best results. Since it whips up in under 2 minutes, it's an easy recipe to make, grab & go!
