– Tortellini – Peaches – Mascarpone cheese – Basil – Prosciutto de parma – Black pepper – Olive oil
Cook tortellini according to package instructions. Add to a large mixing bowl and drizzle with olive oil.
Add in mascarpone and gently fold into the tortellini using a silicone spatula. Next mix in chopped peaches, basil, prosciutto and black pepper. Serve warm or chilled.
