– Cornmeal – Gluten free 1:1 flour – Baking powder – Baking soda – Salt – Monkfruit or sugar – Eggs – Butter – Non-dairy milk  – Apple cider vinegar

In a small mixing bowl, mix non-dairy milk and apple cider vinegar. Set aside. In a large mixing bowl, combine cornmeal, flour, baking powder, baking soda + salt.

Beat together monkfruit, butter + eggs until smooth. Then gently beat in the non-dairy milk + apple cider vinegar mixture. Pour wet batter into dry. Fold batter until no clumps remain.

Pour the batter into the cast iron skillet + bake for 20-25 minutes.
